A Provençal olive oil with a taste that is original, powerful, refined, and fruity

All of the extra virgin oils H of Leos represent the quest for original tastes, and the spirit of excellence and authenticity that drive the teams of Domaine Leos. Traditionally cultivated and hand-picked, the olives (primarily Aglandau and Salonenque varieties) are pressed (the exact term is « crushed ») on the same day at the mill.
Acclaimed by major French chefs (see testimonials from Alain Ducasse, Guy Savoy, Alain Dutournier…), and recipient of multiple medals (eight medals in three years, four of them gold), L’Huile H from Domaine Leos is known for the unique vegetal freshness of its « fruity green, » its exceptional aromatic power, its fine length in the mouth, which is rare in an olive oil, and an « intensity » with minimal bitterness and a slight, final peppery note from antioxidants. Produced in limited quantities, it is distributed selectively and given to a few exceptional restaurants, shops, and delicatessens.

The H of Leos Selection « fruity green » line benefits from the PDO Provence and offers an aromatic power close to that of L’Huile H of Domaine Leos. It is characterised by its colour (pale green with yellow tones) and its aromatic sophistication, dominated by artichoke and hazelnut aromas that are typical of the original « fruity green. » It caters to the taste of a broad clientele…
Beyond their health benefits (the oils H of Leos are particularly rich in polyphenols, mono- and poly-unsaturated fatty acids), there are finishing, refined, and seasoning oils whose aromas are accentuated by the heat of the dishes. Through this method, they « reveal » the cooking and beguile every palate if added to a dish heated at low temperature, or at the last minute, just before being served. This is a way to maximize one’s tasting pleasure and to recover the original taste of the products.

Our Suggestions

In salad seasonings, L’Huile H has aromas that are intense enough to use it alone. It is important to keep in mind in that regard that our small bottles – the 250 ml ones, for instance – usually retain more concentrated flavors.

With starters or cold dishes

The fruity green oils H marry marvelously with main vegetables such as tomatoes, avocados, artichokes, zucchini, peppers, endives, leeks, cabbages, onions, green onions, and spinach, but also with raw vegetable salads, arugula, lamb’s lettuce, or watercress. They enhance the flavour of gaspacho, a tartare, or a carpaccio of beef or tuna. You can also use them on fresh anchovies, sardines, or shellfish. Finally, if you are a gourmet and wish to try a new and striking culinary experience, add a small drop of L’Huile H to a truffle or on a nice tomato with parmesan cheese.

With some cheese

The fruity green oils H of Leos readily bring out the taste of most cheeses, especially fresh goat cheese, sheep’s milk cheese, and feta. One can happily pour some directly on the cheese itself or on a piece of bread as a side dish. Or, in the Spanish way, on toasted bread rubbed with garlic and tomato, and sprinkled lightly with sea salt.

With Hot dishes

You will be surprised by the aromatic contribution of the fruity green oils H of Leos to fresh pastas, rice, corn, potatoes, and mashed potatoes, but also to steamed vegetables or freshly-cooked fish (sea perch, seabass, sea-bream, turbot, trout…) or prawns!
They also go very well with white meat, grilled beef, all kinds of game, duck, lamb or shellfish. Although they can be heated up to 210°C, it’s better to add some at the very end of cooking, or on some hot dishes cooked at low temperatures, no higher than 160°C, to preserve all their flavour.

With desserts

L’Huile H of Leos goes well with numerous fruits, especially strawberries, blackberries, blackcurrants, or raspberries. It is also remarkable with marinated apricots, apple tarts, or crumbles.
