All of the extra virgin oils H of Leos represent the quest for original tastes, and the spirit of excellence and authenticity that drive the teams of Domaine Leos. Traditionally cultivated and hand-picked, the olives (primarily Aglandau and Salonenque varieties) are pressed (the exact term is « crushed ») on the same day at the mill.
Acclaimed by major French chefs (see testimonials from Alain Ducasse, Guy Savoy, Alain Dutournier…), and recipient of multiple medals (eight medals in three years, four of them gold), L’Huile H from Domaine Leos is known for the unique vegetal freshness of its « fruity green, » its exceptional aromatic power, its fine length in the mouth, which is rare in an olive oil, and an « intensity » with minimal bitterness and a slight, final peppery note from antioxidants. Produced in limited quantities, it is distributed selectively and given to a few exceptional restaurants, shops, and delicatessens.
The H of Leos Selection « fruity green » line benefits from the PDO Provence and offers an aromatic power close to that of L’Huile H of Domaine Leos. It is characterised by its colour (pale green with yellow tones) and its aromatic sophistication, dominated by artichoke and hazelnut aromas that are typical of the original « fruity green. » It caters to the taste of a broad clientele…
Beyond their health benefits (the oils H of Leos are particularly rich in polyphenols, mono- and poly-unsaturated fatty acids), there are finishing, refined, and seasoning oils whose aromas are accentuated by the heat of the dishes. Through this method, they « reveal » the cooking and beguile every palate if added to a dish heated at low temperature, or at the last minute, just before being served.
